1. Sheet Pan Thai Glazed Salmon with Vegetables
If you love salmon but tend only to eat it when you’re out to dinner, this one-dish wonder will change your tune. Salmon is actually incredibly easy to make — plus, it’s loaded with tons of omega-3 fatty acids that promote brain and heart health. The mix of veggies called for in this recipe also contribute to your daily dose of nutrients—we’re talking red, green and yellow bell pepper, onion, snow peas, carrots, ginger and lime.

2. Ranch Pork Chops and Potatoes
Pork chop dishes are often reserved for holidays or large family gatherings, but they’re actually not too difficult to cook. It requires just about the same attention to detail as does chicken. This recipe can be baked on one sheet, so it’s an easy dish to make after a long day of work and hard-earned bootcamp (look at you!). The seasoning is also relatively light, but don’t skip out on the ranch salad dressing mix (which comes in a pouch and is sold at most grocery stores)—it’s a must!

3. Sheet Pan Chicken Fajitas
For a fun and festive night in, stir up this Mexican-inspired dish that’s so simple to create. All you need is a healthy handful of multi-colored bell peppers, red onion slices and chicken. You don’t have to purchase a pre-mixed fajita seasoning—if you have all of the spices, you can whip up your own. It calls for 1 teaspoon of kosher salt, freshly ground pepper, 2 teaspoons of chili powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of ground cumin and 1/2 teaspoon of smoked paprika.

4. Lemon One-Pot Pasta
Pasta can be delicious in the summertime, especially when paired with a light and lemony sauce along with in-season veggies and some hearty legumes. That’s just what this recipe delivers—and all you need is one pot! To get a rich flavor, add vegetable broth, Dijon mustard, nutritional yeast and some seasoning (this one calls for a mix of garlic and onion powder). 5. Mediterranean Vegetable Casserole
While a casserole is typically a type of dish reserved for colder months, you can lighten it up enough for it to make the ideal summer dish by using seasonal veggies in the peak of freshness. 6. Sheet Pan Shrimp Boil
The best thing about using one pan to cook an entire dinner is less mess! And that’s always helpful when you’re serving up something as messy and handsy as a low-country boil. This classic southern dish calls for Dutch yellow potatoes, three ears of corn, shrimp, smoked andouille sausage (this gives it that addicting zing!) and some Old Bay seasoning (if you’ve never cooked with Old Bay, don’t try to substitute—go out and buy the real thing!).
