9 Healthy Holiday Leftover Recipes You’ll Love

Eating healthy can be a struggle on an average day, but during the holidays it’s easy to fall into some unhealthy food traps. There are desserts and sugars and unhealthy fats everywhere you turn. Things can get particularly tricky when delicious leftovers are involved, but just because it’s left over doesn’t mean it can’t be tasty and healthy. Turkey can be a delicious source of protein, while the sides made on the big day can be recycled into healthy condiments the following day. Sweet potato, in particular, can make a tasty spread for sandwiches and salads, or even be turned into muffins. Remember that the more colorful the meal, the more nutrients it’s probably got in it, and a meal made with bright orange sweet potatoes, red cranberries and all sorts of nutrient-rich greens can be turned into a very healthy lunch the day after a holiday.

Butternut Squash Soup🍂 So fall. So good. So easy. So nutritious // Made this bad boy over the weekend and the leftovers made a great no-fuss lunch today // I roasted butternut squash, sweet potato🍠 and garlic (w. himalayan salt, pepper, ground cinnamon and nutmeg). I caramelized small white onions and cooked a green apple 🍏 with coconut oil and ground cinnamon (on the stove top after peeling and cutting into cubes). I blended it all up 🌪 while adding vegetable stock with a little water to make it the perfect consistency.👌🏼 // Today it was in a mason jar without the colourful presentation, but it tasted just as delicious! 😋 // You know how I love pumpkin seeds? Well did you know that you can roast the seeds from all winter squashes and they are the same as pumpkin seeds?! 💥😱 Save your 💵 and roast all your squash seeds.
