So nutritious // Made this bad boy over the weekend and the leftovers made a great no-fuss lunch today // I roasted butternut squash, sweet potato🍠 and garlic (w. himalayan salt, pepper, ground cinnamon and nutmeg). I caramelized small white onions and cooked a green apple 🍏 with coconut oil and ground cinnamon (on the stove top after peeling and cutting into cubes). I blended it all up 🌪 while adding vegetable stock with a little water to make it the perfect consistency.👌🏼 // Today it was in a mason jar without the colourful presentation, but it tasted just as delicious! 😋 // You know how I love pumpkin seeds? Well did you know that you can roast the seeds from all winter squashes and they are the same as pumpkin seeds?! 💥😱 Save your 💵 and roast all your squash seeds. I made these sweet potato “buns” the other night for nachos and we’re eating them again for lunch as turkey burger sliders! I love repurposing leftovers into a fresh, new dish! I made the sweet potatoes by thinly slicing them, tossing in EVOO, sprinkling with seasoning, and baking at 400 for 15-20 minutes (depending on thickness). Try it out, you won’t be sorry!
