With fall approaching, it's important to eat your veggies.. especially those that are in season 🥔🍠 ——————————————————————————————— This was a beautiful dish I had the other night composed of braised summer squash, burrata cheese, mint, basil, and hazelnuts. The dish first came out and I thought the whites were a poached egg, but to my delight soon found it was the cheese laid atop everything. With vegetables, it's very easy to either under or over cook them and the taste is altered heavily. This dish seared the squash to perfection and having it combined alongside the burrata made it a simple yet savory side. ——————————————————————————————— Spaghetti squash is my favorite fall vegetable, now the question is, what's yours?
