~ Pickled Squash ~ Had some extra squash so wanted to pickle some. Slice squash thin with mandolin. Boil equal parts water and vinegar (I used champagne vin). Then add honey. Pour spices in jars with squash. One has shallot, bay, aleppo chili, peppercorn. The other has shallot, bay, sage & peppercorn. Pour hot liquid to the top, allow to cool and put lid on. Stored in the fridge for another day. Easy!

The dish first came out and I thought the whites were a poached egg, but to my delight soon found it was the cheese laid atop everything. With vegetables, it's very easy to either under or over cook them and the taste is altered heavily.
