‘Ube’ is Definitely Going to Be Your New Favorite Food Trend

We bet you’ve seen the beautiful, violet-hued ice cream pictures that are taking over social media lately. What is it? It’s called Ube and since doctors always advise to eat the rainbow, we say let’s start with purple:

What exactly is Ube? It’s a root veggie in the same family as sweet potatoes.

Go ahead, pick your jaw up off the floor, we’re just as surprised as you that this uber-trendy ice cream is actually made from a veggie.

And just like those orange sweet potatoes that are nutrient packed, ube does awesome things for your body, too. They are full of antioxidants, including a specific type called anthocyanins, which have been linked to anti-inflammatory properties, as well as protecting against cancer, heart disease and overall brain health. They have 40 grams of carbohydrates per serving and (bonus!) no fat!
