We bet you’ve seen the beautiful, violet-hued ice cream pictures that are taking over social media lately. What is it? It’s called Ube and since doctors always advise to eat the rainbow, we say let’s start with purple:

Go ahead, pick your jaw up off the floor, we’re just as surprised as you that this uber-trendy ice cream is actually made from a veggie.
