Trainer’s Dish: Mushroom Bean Burgers

Who doesn’t love a big juicy burger? I have been experimenting with many different recipes to find a burger that is hearty and decadent and I think I have found the one. Mushrooms give a meaty taste and texture to anything, so I find are the best meat replacements. Adding cannellini beans and chickpeas help make the burger thick and filling.  

These are fantastic to serve to friends, cook for your loved ones or even enjoy as a comfort meal after work.  

This is what you will need:

-3/4 cup mushrooms (I mix shiitake and portobello but you can use any)
-1/2 can chickpeas
-1/2 can cannellini beans
-2 teaspoons tahini
-1 teaspoon cumin
-1 teaspoon chili
-1 teaspoon salt
-1 teaspoon pepper
-1 teaspoon mixed herbs
-2 tablespoons flour (plus more for rolling)

How to make it:  

1. Place the mushrooms in a food processor and pulse until they’re breadcrumb-sized pieces. Add the beans, tahini, seasoning and flour, and blend until it forms a dough that’s firm enough to shape into balls.  

2. Use your hands to form the dough into patties—they can be as big as you want. Then roll each patty in flour so it doesn’t stick to the pan.

3. Fry on a high heat until golden brown and crispy on the outside, flipping regularly. 

4. I love to serve these in a big whole meal bread roll and top with guacamole, ketchup and salad. Absolutely delicious—and healthy!
